

0-400 Chicken Wings
Ingredients
2 to 4 pounds of chicken wings (adjust based on desired quantity)
Dry rub of your choice
Pan spray
Baking powder
Equipment
Pellet grill
Large mixing bowl
Meat thermometer
Instructions
Preparation
Cut chicken wings into separated drumsticks and flats.
Pat the chicken wings dry with paper towels to help the skin crisp up.
In a large mixing bowl, sprinkle baking powder on the wings and toss to coat evenly. Then add your rub and toss until evenly coated. Use enough to get your desired amount of coverage.
Add the wings to your pellet grill, offset smoker, or grill while smoker is not turned on or heated. Start heat and get smoker temperature up to 400.
Cooking
Flip the wings after about 30 minutes. Keep an eye on them as cooking should happen fairly fast.
Once they start to look evenly cooked on both sides, use cooking spray to really crisp up the skin that extra bit. DO NOT spray into an open flame. Pull them off and spray and add them back if you are using a grill. If you're using an offset or a pellet smoker that blocks the flame, you should be good but be very careful.
Let them cook for a total of an hour or so, checking them here and there to ensure they don't burn. If you use a rub with sugar in it, you might see burning happening more easily, so be mindful of that. When the wings look good and crispy and internal temperatures are well past 165, you can pull them off and enjoy!
Feel free to add more seasoning or even toss them in your favorite sauce to really take them over the edge!
