Scorched BBQ - Smoked Chorizo and Beef Queso

Smoked Chorizo and Beef Queso

This is easily one of my favorite items to break out for friends, family, or even just myself. It cooks quickly, it lasts for days, and the flavor just gets better even the next day when it's reheated for a quick lunchtime snack. Without droning on about how much I love it, let's just jump into the recipe.


Ingredients

  • 2 pounds ground beef

  • 1 pound or so of Chorizo

  • 1 can of Rotel

  • 1 can of Cream of Mushroom

  • 1 Block of Velveeta

  • 8 oz freshly grated Mozzarella cheese

  • 1 Jar of Jalapeños

  • BBQ Rub - (Optional but highly recommended. I like the Weber KC Rub)


Equipment

  • Pellet grill

  • Large mixing bowl


Instructions

Preparation

  1. Cook beef and chorizo

  2. Combine cooked meat and all other ingredients in dutch oven or something similar that is oven/smoker safe. You can mix in the bbq rub now, or I like to wait until the end and sprinkle it on top when it's time to eat. Your choice!


Cooking

  1. Preheat smoker to 350 degrees

  2. Add queso mix to the smoker

  3. Let smoke and stir every 15 minutes for a total cook time of 45 minutes.

  4. Pull off and let cool.

  5. You can enjoy the tasty smoked chorizo and beef queso now or sprinkle some rub on top to really send it over the edge.

  6. Also just another point - this is one my favorites right off the smoker, but reheating it the next day is almost even better in my opinion. Just wanted to put that out there!
